One of the dishes I made for Valentine’s Day dinner. I replaced the green peppers (as I can’t eat them) with asparagus – this didn’t quite work but it was good. The prawns were good – I made sure not to overcook them, as there’s nothing worse.
Serves 4
Ingredients
2 tbsp vegetable oil
300g large raw prawns, cleaned, peeled and deveined with tails left on
1 tbsp tomato puree
150g onion, chopped
150g green peppers, chopped
1 tbsp lemon juice
2 tomatoes, chopped
1 green chilli, chopped
2 tbsp fresh coriander, chopped
2 tbsp mango chutney
3tbsp mustard oil
1 tsp sugar
Method
Heat the vege oil in a large frying pan, add the prawns and stir-fry over a medium heat
Stir in the tomato puree then remove from the heat. Put into a bowl large enough for all the other ingredients to be mixed in later. Allow to cool.
Mix in the remaining ingredients, season to taste and serve cold.
