Recipe #55 Special beetroot soup

I used vacuum packed beetroot rather than fresh. Worked just as well, though the colour wasn’t as good. Tasted great.

Serves 6
Slimming World: FREE on Extra Easy

Ingredients
454g fresh uncooked beetroot, peeled and grated
1 large carrot, diced
2 onions, chopped
57g red cabbage, shredded
1 tsp artificial sweetener
1 bay leaf
1.5 litres vegetable stock
Fat free fromage frais and a few chives, to serve

Method
Preheat oven to 150°C.
Place all the ingredients (except the fromage frais and chives) in an overproof dish, cover and cook for three hours. Remove the bay leaf, transfer the mixture to a food processor and blend until smooth.
Serve garnished with a swirl of fromage frais and a few snipped chives.
