This recipe was adapted from the Cool Camping cookbook – a great series, highly recommended. We added what ever we happened to have around to the mix.
I softened a couple of chopped onions and a couple of chopped courgettes in Fry Light and a little water. I added a couple of cloves of chopped garlic, a can of chopped toms and a whole heap of Herbs de Provence for flavour. If we’d had some red wine I’d had added a slug at this stage! I added some mange tout a few minutes before serving.
