Canapés pt 3 – devilled eggs

These devilled eggs were made with a new recipe – this one from the Slimming World website. Another difference – the devilled part was curry powder, and normally I’d use mustard. It worked well with the natural yoghurt as a mixer.

12 hard-boiled eggs
2 tbsp fat free natural yoghurt
1 tsp mild curry powder
salt and pepper
coriander, chopped

Peel and half the 12 hard-boiled eggs. Scoop out the yolks and place in a bowl.

Mash with a fork and mix with curry powder and yoghurt. Season and spoon the mixture back into the eggs.

Garnish with coriander.
