I hadn’t quite finished waxing lyrical about the mini fritattas I made for Mum’s 70th birthday party. Look how cute they are on their platter?! The star-shaped ones looked really good as party food – many thanks to silicone cupcake cases!
I mentioned previously that they needed more seasoning.
The ones with asparagus in ended up tasting pretty good – the flavour matured overnight while they were chilling. Perhaps some chopped basil would have been good in the mix.
The mushroom and bacon frittatas needed more bacon.
The tomato fritattas also turned out OK, though a wee bit grated cheddar or parmesan would have been good.
I’ve been thinking about other fillings – olives; tomato and onion; roasted peppers; salami.
As well as using the mini frittatas as nibbles, they would be great served warm with salad as a light lunch.
