I needed a non-fishy entrée for a family meal – sister and husband aren’t too keen. Prawns seemed an easy fix – but what to do with them?
– 200g of fresh prawns, rinsed and dried
– the juice of a half a lemon
– the zest of a lemon
– a tablespoon and fresh chopped dill
Leave to marinate in the fridge for an hour before serving in small bowls, with cocktail sticks for guests to serve themselves.
