Mushroom stuffed pork

I’m never very sure what to do with pork, so this recipe was made up. I had some mushrooms that needed using up, so making them into stuffing seemed logical. They turned out kinda like the pork version of beef olives.

This was the first time I used our new silicone food loops – designed for tying and trussing, and reusable.

Mushroom stuffed pork

4 pork loin chops
200g mushrooms
1 tbsp quark
2 tsp dried thyme
A few handfuls of fresh rocket
Zest of 1 lemon
Juice of 1/2 lemon

Remove all visible fat from chops. Place the chops between two layers of clingfilm and beat with a rolling pin until a few millimetres thick.

Finely chop the mushrooms and rocket in a blender. Add quark, lemon zest & juice, thyme – mix. Put a large dollop of the stuffing on each chop and roll chop. Secure with food loop (or cocktail sticks would do too).

Place in a greased (with Fry Light) dish and cook at 200 degrees Centigrade for 25 minutes (or until cooked through).

Slimming World Syns – this recipe is Syn FREE on Extra Easy, as long as you remove all visible fat from the meat.
