This week’s is beef with root vege – butternut squash and carrots. We both love butternut squash but am taking a risk with carrots by putting them in chunks (I usually grate them) – Hubby is not keen. So we’ll see how that goes down.
I roughly chopped two onions, a butternut squash, and 5 of 6 small carrots. These were added to the slow cooker.
I added 450ml that’s how much water one Knorr stock cube needs) beef stock and seasoning. I also added at least 2 tsp Herbs de Provence.
The slow cooker was set for 8 hours. Tasted great when it came out and will be having it with some leftover pasta for dinner tomorrow night.
