When we run out of lettuce I make up a sort-of salad. It usually includes gherkins and beetroot – this time they were very small gherkins, and boiled (rather than pickled) beetroot. And – because everything is better in threes – a good dollop of my curried apple and carrot chutney (which is coming along nicely) on the side.
I always feel a bit virtuous when I finished a jar of something from the back of the fridge – this week it has been the gherkins!
