This has got to be the most simple salad ever, and one of the best tasting. Tomato and mozzarella is a classic combination, and one you’ll find on many an Italian menu (probably with basil instead of rocket). And, of course, it tastes beat with fresh ingredients in Italy!
Balsamic is a key flavour in this recipe, and a good quality balsamic makes all the difference.
Put a healthy portion of rocket for each person on their plate. Drizzle balsamic dressing (or straight olive oil and balsamic vinegar, proportions 3 or 4 to 1) liberally on the rocket.
Slice your tomatoes and arrange on top of the rocket. Drizzle with more dressing (or straight balsamic – it’s great with toms). Before serving, lay sliced mozzarella on top of the salad, and season with black pepper. Serve immediately. (You could add a few decorative leaves of basil atop the cheese, for colour if nothing else.)
