Tattie scones are a simple recipe – mashed potato and flour. With gluten free cooking its key to make sure the mixture sticks together – this is the job the gluten (in regular flour) usually does. So in a gluten free recipe an egg can be added to keep the mixture together.
Add an egg to the mashed potato, and mix. Add flour until the mixture is firm but pliable. Divide into equally sized pieces. On a floured surface, roll out the pieces into rounds. Fry each round in a large frying pan or skillet until browned on each side and cooked through. Serve hot, with melted butter.
Tattie scones are excellent with breakfast, particularly bacon and sausages.
