I’m sure I’ve posted about roast potatoes done the Slimming World way, but they’re just so good I can’t help myself! These roasters are an accompaniment to our Valentine’s dinner (more on that later).
Freshly cracked black pepper
Preheat the oven to 200 degrees Centigrade.
Spray your roasting tin with lots of Fry Light.
Chop the potatoes in to chunks. Parboil, if desired or necessary.*
Put the potato pieces in the roasting tin. Spray with more Fry Light. Toss.
Sprinkle Rosemary, sea salt and pepper over the potatoes. Toss. Spray with Fry Light.
Roast in the oven for an hour – or until they are you preferred level of roasted! Take them out and toss at least once. You could add more Fry Light too!
*You can parboil them before roasting – for about 5 minutes – this will cut out some roasting time. But I like my roasters small, so cut them in to 1cm or so chunks and don’t bother faffing with parboiling!
