Tomato and orange soup
450g tin Italian tomatoes
1 medium onion
600ml orange juice (carton is best)
Generous pinch sugar
Salt and pepper
Chop the onion. Fry it in the butter until soft, but not brown.
Add the tomatoes and orange juice. Simmer together for 15 minutes. Blend until completely smooth, adding the pinch of sugar while the blades are working.*
Taste for seasoning – it will need a good large pinch of salt. Serve hot, garnished with a couple of slices of orange.
* You can use a food processor or hand blender.
