Old favourites: fruit compote

Fruit compote

100g sugar
250ml water
500g fruit

Stone and half the fruit – plums are great. You can even use those cheap, under-ripe ones that never ripen!

Add all the ingredients. Heat gently, until the sugar has melted. Continue to cook on a low heat until the fruit has cooked through and is stewed – the colour should deepen and begin to colour the sugar syrup.
