Old favourites: mojitos


1 part white rum
3 parts soda water (aka club soda)
12 mint leaves
1/2 lime
1/2 part sugar syrup

Place mint sugar syrup and line in a cocktail mixer and muddle. Add crushed ice. Pour over rum and soda. Serve.

Lavender syrup

2 cups water
2 cups granulated sugar
2 tbsp fresh lavender blossom

Place all the ingredients in a large stainless steel pan. Bring to the boil. Remove from the heat and allow to steep for 30 minutes. Strain, chill and refrigerate, covered.
