One pot: potatoes, shallots, sausages, tomatoes and eggs

When we were shopping at Pillars of Hercules this weekend, Hubby got distracted by Fletcher’s venison with red wine sausages and we just had to buy them. He had the idea to do something akin to the one pot egg and chips we had earlier this week, so I bought some beautiful wild tomatoes and shallots (both organic) to cook with them.

True to form, the sausages were superb. I guess it helps that we know that the venison comes from a farm up the road! We’ve never been disappointed with any Fletcher’s venison – meat for stews, roasts, and now sausages. Excellent meat, well and ethically produced.

The tomatoes were delicious – fresh and flavourful. They were not cheap – being organic and imported from Italy – but they were absolutely delicious!

And the one pot nature of this dish meant that all the delicious flavours – including the fat from the sausages – cooked and matured together. So good, Hubby said he didn’t even want brown sauce with it – praise indeed.
