Slimming World fried chicken

2 chicken breasts
8 wholemeal Crackerbreads
2 tsp dried mixed herbs
Some milk
salt and pepper

Place a breast of chicken between two pieces of cling film. Beat with a rolling pin until 3-5 mm thick.

Blend the Crackerbreads in a handblender or food processor until fine. Add the mixed herbs and salt and pepper – mix.

Pour some milk into a bowl. Dip the chicken in the milk – both sides. Let drip for a few seconds. Dip in the Crackerbread mix.

Fry in a hot frying pan greased with Fry Light. Cook each side for a few minutes. Make sure the chicken is cooked through before serving (there should be no pink when cut open).

Serve with Slimming World chips and a side salad.

Top Tip: spray a bit more Fry Light in the pan before flipping over so both sides get greased.

Slimming World Syns: The milk is negligible Syns. The wholemeal Crackerbreads can be a Healthy Extra (6 per day) or are 1 Syn each.
