More Slimming World cheese and onion pie

I made a fabulous cheese and onion pie the other day, but it needed improving. So this time I made two delicious and key changes:

  1. I added bacon to the topping. I removed all the fat from the bacon, grilled it, left it to cool, and put through the food processor to make it breadcrumb size (tiny bacon bits make a fabulous Syn Free alternative to breadcrumbs), then added it to the cheesey topping.
  2. I added 400g fat free cottage cheese with a whole bunch of fresh chives and the dried mixed herbs through it.

The recipe was much improved! There was more liquid from the vege this time, and with the added cottage cheese this made for a more moist pie filling. And the topping was excellent – bacon!!!!
