Tomato, sweet potato and orange with roasted red onion and balsamic bread

Today was Mother’s Day and we had our Mothers around for a lovely lunch (well, only one Mother had to travel, the other lives here!). More on the lucnh later…

To start I made the tomato and orange soup I recently posted the recipe for. But we had some leftover cooked sweet potato from dinner the other night, so I added that. The sweet potato was an excellent addition, adding a bit more consistency to the soup without disrupting the deliciously fresh flavour. I do love this soup, but haven’t had it in such a long time becuase it is not very Slimming World friendly, what with the orange juice.

To accompany the lovely soup I made some rolls, from a packet mix by the ever-lovely James Martin (he also has an excellent range of plates too). The mix was pretty easy to make up, but making bread is always a bit of a hassle, with the kneading and the proving, and the kneading and the proving. But worth it, as they were lovely. The flavour was roasted red onion and balsamic vinegar and they were served hot, straight from the oven.
