We had a whole bunch of (rather over-boiled!) eggs left over having rolled them on Easter Sunday, so I decided an egg mayo sandwich was the way forward. I chopped up a couple of eggs, added a tablespoon of lowest fat mayo, a large tablespoon of fat free fromage frais, and seasoning. I topped two slices of Hovis Nimble brown bread with the egg mayo, iceberg lettuce and wafer thin ham. I had a few Balsamic-marinated onions and cherry plum tomatoes on the side.
