A very vegetabley ragu and meatballs

More leftovers needed cooking after our Easter weekend, and Mum made up a tomato sauce (or ragu) with ALL the leftover vege in it, including carrots and mushrooms from the various recipes over the weekend. SHe also added some olives from the jar that has been lurking in the fridge for some time… The were also 24 meatballs which Papa bought “just in case”, in addition to the kilo of pork and kilo of steak to go in the hot pot – at least I know where I get my propensity to over-cater from… The sauce and meatballs were served with some of the leftover Exquisa potaotes from Easter Sunday lunch, and it was all excellent.
