Vege patch produce: potato and chive salad

Another benefit to our recent moving house is a garden with a vegetable plot. This weekend we began clearing out the vege patch, and discovered all the potatoes that were lurking from previous seasons. Some of them might taste ok…

My first vege patch recipe was potato salad, made with our own potatoes and chives fresh from the garden:
– chop the potatoes into bite-sized chunks
– cook in boiling water until cooked through
– drain and allow to cool slightly, then place in mixing bowl
– add low fat mayo (count about 4 Syns per tbsp) and fat free fromage frais to your liking, and mix to coat
– add lots of chopped chives, a tsp of mint sauce, and freshly cracked black pepper, mix, and serve (if it’s still a wee bit warm that’s fine!)
