I went away camping this weekend with friends for a Stag weekend (yes, girls can have those too…) and we had a pot luck dinner when we arrived. We were in a kåta – a large, canvas tent, built on a platform, with furniture and a wood burning stove – but facilities were limited, so a stew seemed like a good idea: easy to reheat. Last summer when Hubby and I were camping we had a yummy ratatouille, so I decided to make that again.
This time I added aubergine to the vege mix. I also added a large glass of red wine along with the tomatoes, and a splash or two of Balsamic vinegar too.
The proportions were somewhat larger than last time: six onions; four courgettes; two aubergines; and four tins of tomatoes.
