Dinner party: watercress soup

I posted earlier today about the dinner party I’m having tonight. Well, we’re having watercress soup to start, taken from a recipe on the BBC Good Food website.

I’ve never made watercress soup before. in fact I may not have eaten it before. So any excuse to try out a new recipe!

I think it tastes pretty nice. I mean, it tastes like watercress, so you have to be good with that. But it tasted really watercressy, which I wasn’t expecting for some reason. But it is good.

Fun thing to note: the Kallo stock, made from cubes, separated rather beautifully. Pretty.

Serves 8

6 leeks, washed and sliced
1 large celeriac, peeled and chopped
2l vegetable stock
300g watercress

Soften the leeks in a large pan in a little Fry Light and a splash of water. Keep the lid on. Soften but do not let them colour.

Add the stock and celeriac. Bring to the boil and leave to simmer until the celeriac is softened.

Take off the heat. Add the watercress. Blend. Serve.

Or freeze for up to three months. Or – in my case – refrigerate overnight and reheat the next day!

To serve: I served in wide, shallow bowls, with a dollop of fat free fromage frais and a few chives to garnish.
