When I was younger I remember Papa making these wee treats with bits of leftover pastry from whatever pie was being cooked that evening. It’s the perfect cheaty recipe for using up pastry scraps, of you can go all out and use a whole block of pastry to make plenty of wee nibbles for having with pre-dinner drinks.
Take one block of puff pastry. Cut in half. Roll out one piece to about 1mm thin. Spread one half of the pastry with pesto; fold over the pastry to making a long pastry-pesto sandwich. Roll the pastry – loosely* – lengthwise; slice in to 1cm rounds.**
Repeat above for the other half of pastry, but put in grated cheddar cheese instead of pesto.
Place the rounds on a greased baking tray. Cook in a warm/hot oven for a few minutes, until the puff pastry has risen and golden.
*If you roll the pastry loosely it will stop the centres of the nibbles being too compact and therefore undercooked.
**At this stage you could wrap the roll in cling film and keep in the fridge until ready to use – perfect to prep the night before a dinner party.
