Sides: roasted courgettes, shallots and garlic

I had the oven on for gammon and chips (Slimming World style, of course!) the other night, and popped in some vege to roast along side.

I really wanted cherry tomatoes to roast, but all we had were some courgettes – but it worked a treat! A couple of courgettes, chopped into chunks, plus ten or so shallots (peeled) and six whole cloves of garlic (peeled) – chucked in a roasting pan with lots of Fry Light and seasoned with oregano. It went in to the oven for about an hour of the gammon’s roasting time. Delicious. So good I burned by mouth eating it! My favourite bit is the whole cloves of roasted garlic – absolutely divine!

Slimming World Syns: this meal is Syn free on Extra Easy. Make sure you cut all the visible fat off you gammon roast before putting it in the oven.
