What to do with a whole heap of mint: mojitos

The lovely Chairwoman of our Friends organisation at work gave me this splendid bouquet of mint after our works cocktail party. But what to do with it!? Well, mojitos were the first thing to spring to mind – I have to be honest!

Ingredients per serving
1 part sugar syrup
A sprig of mint
1 lime
1 part white rum
Soda water

Add the mint (stalk included) and sugar syrup to a sturdy jug. Cut the lime in half and squeeze the juice into the jug. Throw the two rinds in too.

Muddle: this means to press, or gently pound.

Strain into a glass. Fill the glass with ice. Add soda water until the glass until it’s 2/3 full. Add the rum, and mix. Garnish with a sprig of mint.

Making more than one? Mix in a large jug, enough for the number of servings. After muddling the appropriate amount of ingredients, don’t strain – leave the mint and limes in the bottom of the jug. Fill with ice, add soda until 2/3 full, and add the rum. Mix and serve – make sure you get a couple nice bits of mint in each glass!
