A healthy breakfast: spinach, eggs and bacon

This was a simple and delicious breakfast, and just what I needed to kick off a busy day of holiday planning.

I cooked up a whole bag of spinach by steaming it for a few minutes in a pan until wilted. Then squeezed off the water and put it in the bowl.

This was topped with a couple of fried eggs. These were cooked in a non-stick pan, greased with Fry Light. No more oil is needed – the eggs will slip right out of the non-stick pan once the whites are sufficiently cooked underneath.

The final touch was a sprinkling of grilled bacon bits (with all the fat removed before cooking, of course)!
