Happy 4th everyone! How’s about a recipe for watermelon salad to celebrate?!

So far on this trip I’ve been posting the foodie highlights of our trip in chronological order, albeit delayed by a couple of days. But, today being the 4th of July, I thought it would be apt to do a couple of posts in honour of the Festive fun we’re having today!

First up, a recipe from the local paper, this one for watermelon salad:
Combine:
– 3 cups cubed watermelon
– 6 oz crumbled feta or blue cheese
– 1 pint cherry tomatoes, halved
– 1 pint blueberries
– fresh basil, torn, to taste
Season with salt and freshly cracked black pepper, and serve. Hugely refreshing if you’re celebrating somewhere hot (it certainly is in SC!), and colourful too (see below).

Red, White & Blue alert! Note this recipe has the requisite triccolour for the Holiday: red watermelon and tomatoes, blueberries and white cheese – sorted!

Slimming World Syns:This is a great Slimming World recipe, as no dressing is necessary. If you use low fat cheese, and include it as your healthy extra, you’ll be laughing.
