A very Scottish soup: leek and tattie soup with kale

When we arrived at our final destination on our US trip we were greeted by parents, aunt and uncle, and cousins. And a family meal, of course! The soup was leek and potato – strained until smooth, and looking very creamy – with kale added at the end. The kale was a great addition, if a little troublesome to eat! It was a cold soup – a gazpacho – and just the thing in this heat wave.
