Marrow, stuffed with yummy leftover beef stew

Every year I fall for buying a marrow, and every year it stays in the fridge for at least a week before someone has the guts to do something with it. And it’s so easy, so I don’t know why I always put it off! I guess I was waiting for some delicious beef stew to fill them with.

Hubby started by cutting the marrow into four thick slices. You can take the centres out to leave a thick rings, and either dispose of the seeds and flesh or use it in your stuffing. Cook the marrow: either in a roasting pan in the oven; steamed; or in the microwave. When tender, fill with hot stuffing: a tomato sauce, ragu, or stew would be ideal. Finish off in the oven until the filling is hot and bubbling. Serve topped with grated cheese.
