We had more visitors this weekend, so another slow cooked stew was called for. This time it was a Slimming World friendly chicken stew, spiced with cardamom, smoked paprika and cinnamon. My goddaughter said it smelled amazing! That’ll be the smoked paprika – a great flavoursome ingredient.
Put the following ingredients in the slow cooker:
– 8 pieces of chicken on the bone (ie thighs and legs) or 4 breasts cut in to chunks, skin and fat removed, and browned
– 1 aubergine, chopped in to chunks
– 1 courgette, chopped in to chunks
– 1 large onion, chopped
– 2 tsp smoked paprika
– 1 tsp ground cinnamon
– 1 tsp freshly ground coriander seeds
– seeds from two cardamom pods, freshly ground
– 1 can chopped tomatoes
– 50 ml water
Our slow cooker does it all automatically, but if you have two heat settings it should go on high for about an hour and low for six hours or so.
After its time in the slow cooker I decanted the stew to a large pan and added a jar of black olive (drained) and a few splashes of balsamic vinegar (to help round the flavour), and left to simmer for an hour or until ready to eat.
If you’re using chicken on the bone the meat will fall off. I usually try to take out the bones before serving!
I served this stew with rice.
Slimming World Syns: this stew is Syn free apart from the olives. You could add more vege if you don’t think you’re getting enough Super Free, or have a salad on the side.
