Pizza topped with smoked salmon, basil and mascarpone

I can’t take credit for coming up with this pizza topping: Tina did! And it was pretty awesome. I treated myself to something (a) tasty and (b) with fish because Hubby is out for dinner with his new boss (and he dislikes fish, so I eat it when he’s not around).

I got a plain margarita pizza from Tesco – one of the stone baked variety – and added:

  • ripped basil leaves
  • shreds of smoked salmon
  • wee dollops of mascarpone

And cooked the pizza as per the instructions – ten minutes in this case.

Yum. The mascarpone is particularly good on pizza…
