Quick and easy broccoli soup, with added Stilton if you’re that way inclined

Vege soup is easy: cook vegetables in enough stock to just about cover them, until they are soft, then blend (or not if you like chunky soup). This one has Stilton added (the last of the Festive cheese!), but without it is 100% SW Syn Free. You could replace the broccoli with:
– equal parts leek and potato – the tatties take longer to cook
– equal parts onion, carrot, leek and potato for Potage Bonne Femme
– cauliflower – which would work with the Stilton, or add curry powder instead for flavour (and it’s Syn Free)


A large onion
A leek
A stick of celery
Two heads broccoli
Stock to cover (a pint or so) – I use chicken for
Stilton to taste

Spray some Fry light in a large, heavy based pan. Add the onion, leek and celery – all roughly chopped. Put a low heat under the pot. Add a little water to help soften the vege. Stir occasionally until the vege are softening (the onion will begin to go clear), and if necessary add more water to keep the vege from sticking.
Add the broccoli, also roughly chopped – the stalks may need to be more fie lay chopped for quicker cooking. Stir the vege over a medium heat until the broccoli goes bright green. Add enough stock to just about cover the vege. Season to taste. Simmer for 10 minutes.
After the broccoli has started to soften at its hardest part, but before the broccoli starts to go soggy green, remove from the heat. Use a blender or hand blender to blend the soup.
Put back on a low heat. Add Stilton to taste and heat through.
